Vine Training Method: guyot 4000 vines/hectare
Vinification Techniques: Drying in the fruittaio (drying room) in boxes until January. Fermentation over 50 days with three daily remontages (pump-over) and two delestages (rack and return). Use of pigeage (punch down) to press down the floating grape solids.
Fining: 24/30 months in oak barrels of 15 hl, three months in bottle
Wine of high station that reveals rank and great structure in the glass, fresh fruit to the nose, and over time develops hints of jam, tones of spice with a hint of tobacco and woods in the finish. Its extractive richness permits long periods of storage, that increase its complexity and sensation.
