The pears from the Black Forest region, are harvested in autumn when they are fully ripe with pink amber coloured skins. They are cold stored before being macerated in a small quantity of Williams pear distillate to develop their natural aroma. A pressing produces a very concentrated pear juice. Fourteen kg of pears are needed to produce 70 cl of Liqueur Poire au Cognac. The liqueur is obtained by blending Cognac Premier Cru Grande Champagne, Williams pears natural aroma, sugar syrup and distilled water.
Aged 2 years in white oak barrels. To the nose it presents aromas that are typical of cognac and the fruity notes of Williams pears. In the mouth it is unique and harmonious.
Excellent as digestive. If served very cold with 2/3 Champagne it makes a delicious aperitif.
