To wine is added wine alcohol, ‘mistella’ (fresh must to which alcohol and wine have been added) and cooked must (fresh must reduced over direct heat). This complex mix gives Marsala its traditional aroma. After ageing in small barrels, it acquires a brilliant colour with amber reflections, and flavours of roasted almonds, dates and sultanas.
