Drying (appassimento) at 350 m above sea level for approximately two months. Fining in oak barrels of 25 hl and 56 hl for 20 months. Assemblage before bottling in steel tanks for two months. Bottle fining in dark and cool cellars for at least one year before going on the market.
The concentrations and the aromas that develop during the appassimento produce a wine of great finesse and personality. Intense ruby red colour. Complex aroma, spicy, with scents of jam and dried red flowers. Warm, strong, full taste, round and harmonious.
