The sparking base is stored in steel containers till the spring following the harvest. After the tirage it rests on the yeast lees for at least 36 months before disgorgement.
The wine has the the typical colour of onion skin. Fine and persistent perlage. Intense aroma with notes of yeast, plum, walnut. To the mouth it is dry and fragrant, of good structure and persistent freshness. Excellent drinkability.
